新しい製造法による脂肪酸のショ糖エステルには脂肪酸のビニルエステル<10-111 mg/kg、アセトアルデヒド20-48 mg/kgの不純物が含まれる。これらの暴露量は香料としての使用を拡大しても安全上の懸念はない。脂肪酸のショ糖エステルの暴露量についてはADIを超過する場合がある。
