サケとマスには最大許容量までアスタキサンチンを使用しても消費者の安全性の懸念はない。アスタキサンチンはサケ科の肉色・甲殻類の表皮・サケ科以外の食用魚の肉色・観賞用の魚の表皮の着色に効果的である。観賞用の鳥の羽を着色する効果については結論できなかった。
